Layer by layer, panels of PCMs are used in these ovens.
When time passes and cooked food starts to get cold, PCMs used in ovens change phase and release their latent heat to stabilise and maintain food temperatures at a desired range. Food will remain at that range for up to 2-3 hours.

After the mentioned time, PCMs will get recharged by the resistors and will be ready again to keep food at the desired temperature for another 2 to 3 hours.
By using this solution we achieve a huge reduction in the consumption of energy carriers in comparison to similar heaters (e.g. microwaves).
The melting point of PCMs used for this matter stay between 55 and 65 Celsius degrees.
